First try: Pate-a-choux
Pate-a-Choux
I haven't made pate-a-choux since I was about 15 years old. I used to make this stuff every weekend and stuff each with ooey gooey custard (made with Birds Custard Powder). For me, this was the biggest treat!
To be honest, I had totally forgotten how easy this stuff is to make. It doesn't take very long, there is hardly any mess at all and the pastry is very versatile! These ended up being stuffed with a little fig and chocolate pudding. It was exactly what I was looking for! Of course, I didn't get eat any as I am still on a lactose free diet, but feedback was wonderful and I can't wait to stuff these with cheese!
The recipe I used was Alton Brown's Sweet or Savoury Pate a Choux.
