I am so Berry Happy!
The berry season is so close I can taste it! Each trip to the grocery it becomes harder and harder to resist the southern imports of my very favorite, strawberries! I first spotted them last month, selling for 4.50$ a pint, and now they are at 1.50$ for two pints. These were the perfectly ripe strawberries of California. Very large, bright red and firm, they look delicious. I ward off the temptation to buy some of these "imports" by imagining the amount of transportation it took to get them into my area. I pretend that I can taste our local strawberries, smaller but sweeter and juicier than any strawberries I have every tasted! However, I am only human, and this week, I caved in.When I am not devouring strawberries straight from its container, I usually make a salad. Two cups of mixed greens, one sliced kiwi (I keep the skin on), one cup of sliced strawberries, two tablespoons of pecans, and one cup of roasted chicken tossed with some hot sauce and cut into cubes. Toss these all together with a small amount of olive oil and lemon juice. Occasionally I will add some melted goat cheese to this. This should probably serve four people, but only serves two in my household!
